Week 3

This week we had a whirlwind day as we were all buzzing around in the kitchen and each of us made our own homemade chocolate pie and pilgrim cookies to take home. We learned how to separate egg whites from egg yolks and how to make meringue. I was thrilled that no one popped a single yolk! This is a smart group!
We talked about the importance of cleaning our kitchen's when we cook throughout the week. I even suggested the mom's take pictures of untidy kitchens so we could post them on the blog! HE-HE! I'm not to sure that went over very well. :)
Looks like everyone will probably be able to make it next week...and Madelyn will be joining us! YIPPEE!

Recipe for Mrs. Melli’s Chocolate Pie
~Melanie Doris

Pie Filling
1 pie shell (baked and ready)
1 cup sugar
5 Tbs. flour
4 Tbs. cocoa
Dash salt
3 egg yolks (save the whites for the meringue)
1 can evaporated milk
Lightly spray oil in medium saucepan
1 tsp. vanilla

Before starting, poke holes in crust and bake according to package directions.

Mix sugar, flour, cocoa, and salt in bowl.

Separate egg whites and egg yolks in small bowls. (Do not let any yolk spill into the egg whites)

Beat egg yolks.

Spray oil in saucepan. Add can milk, and egg yolks and stir like crazy! Mix thoroughly (with whisk) on medium heat.

Add the sugar mixture and stir constantly (using whisk) until it thickens. It may take up to 10 minutes. Use medium heat and don’t leave it! It must be stirred non-stop! When it becomes thick you may add the vanilla and pour immediately into the pie crust.

Meringue
3 egg whites
2 dashes of cream of tartar
¼ cup sugar
½  tsp. vanilla

Beat the egg whites with hand mixer. While beating add the cream of tartar and sugar slowly. Add the vanilla. When the meringue becomes stiff you may spread it out on top of pie and use spatula for form ‘peaks’.
Bake at 345 degrees for 8-10 minutes.
